Chicken & Miso Soup

Chicken Soup with Miso, Carrot and Sweet Potato 

This recipe is an adapted version of one by Jo Hogan (Slow Postpartum)

This is delicious. It’s a two day cook if you are roasting the chicken and boiling the bones for stock (I did). It is worth the faff. 

This isn’t one to make for yourself in your fourth trimester. This is a freezer recipe or one to pass along to friends and family. 


Ingredients 

  • Roasted Chicken 

  • 1 Leek 

  • 4 Garlic Cloves 

  • Fresh Ginger  

  • 3 Carrots 

  • 1 Sweet Potato 

  • 1 tsp Turmeric 

  • 2 tbsp Miso Paste 

  • 1.5 Litre Chicken Stock (ideally homemade)
